The Culinary Square is scheduled to open in spring 2027, bringing a shared-use commercial kitchen, event venue, and food incubator to the former Mike's Restaurant and Crab House in Glen Burnie. The project aims to provide local food entrepreneurs with a licensed location to cook, store, and sell their products without the capital burden of building or leasing individual commercial facilities.

Gretchen Moran, who is developing the site, stated that the concept addresses a specific gap in the regional food infrastructure. She noted that while Baltimore and Washington, D.C., have thriving shared kitchen communities, many operators in Anne Arundel County currently work out of existing kitchens that are not designed to accommodate multiple operators simultaneously. Moran said she observed that these single-operator spaces limit the growth of small businesses and the diversity of local food options.

Moran described the shared kitchen model as a niche industry with approximately 300 locations nationwide. She explained that the core function of these facilities is to build the missing infrastructure in the food system. By connecting the dots between available space and the needs of food operators, Moran said The Culinary Square was born from the desire to support both the businesses and the wider community.

Kelly Bell, owner of The Bell House Catering, is already partnering with the project. Bell said she is excited about the potential the new facility offers to the local food scene. "It was exciting to know if this happened 10 years ago I would've had a place to go," Bell said. She added that while it took time for her business to reach its current level, the presence of a dedicated shared kitchen will help realize the dreams of many other aspiring food entrepreneurs.

The facility will include culinary and nutrition classes in addition to commercial kitchen space. Moran described the classes as affordable, entertainment-style sessions designed to help residents learn how to use ingredients from sources like farmers markets. The event space will also be open to the community for gatherings. Moran referred to this as a "nefarious agenda" to bring the community back together around food.

Local business Let's Chow and the Maryland Food Bank are also supporting the initiative. Bell noted that having knowledgeable partners like Moran helps guide entrepreneurs who may be unsure of the operational requirements. "You wanna be able to have those folks who know what they're doing to help support the people who may think they know what they're doing," Bell said, emphasizing the value of structured guidance in the early stages of business development.

The project is being financed through the "Own your Future" loan from the Maryland Department of Housing and Community Development and the VOLT fund from the Anne Arundel Economic Development Corporation. These funding sources are helping to convert the former restaurant site into a multi-functional hub for food production and community engagement.

The Culinary Square is set to open its doors in the spring of 2027. The facility will serve as a base for food trucks, caterers, bakers, and specialty food brands, allowing them to operate under a single licensed roof while maintaining their individual brand identities.
